Celler Vell pays tribute to the typical varieties in preparing its traditional cava in the Penedès region. The Macabeu variety gives body to the blending, the Xarel.lo gives it its personality, and the Parellada variety, its touch of distinction.

On the other hand, the company does not wish to turn its back on progress and the product’s greater sophistication and has also opted for the so called High Range, with the utmost refinement both in the “bouquet” and in the presentation. The inclusion of Chardonnay in the Extra Brut and Estruch Brut Nature Clàssic is a clear example of this.

Principles that guide the production of our Cavas

The use of wines from the first pressing, fermented in a controlled manner in stainless steel drums at a constant temperature in order to preserve the original virtues, the taste and aroma, of the Penedes musts.

A selection of the most suitable yeasts and sugars to achieve a second fermentation with everything this involves: fine, regular bubbles, a persistent crown...

The use of a dosage with clear, transparent aroma and taste (rejection of essences), that does not mask the qualities of the base wine, but helps them to stand out, to bond perfectly.
