Cuvée Les Solanes B.Nature Reserva
Celler Vell has the pleasure to offer you this Artisanal Cava, made up of 1/3 Xarel.lo
and 1/3 Chardonnay, both fermented separately in “allier” second-fill 300-litre
French oak barrels. Then batonnage occurs –the stirring of the lees (yeast) at the
bottom, leaving them in suspension– to give it body and smoothness… The wine is
stored in the container for the appropriate time, normally between 6 and 8 months.
Finally, the coupage is carried out, making up the remaining third with the fine
"Pinot noir". Now in the bottle, it is aged for about 2 years, creating a Cava with
a full colour, scent and taste.
Flavour: Deep golden colour. Very fine stream of bubbles with a complete,
persistent crown. Complex aroma, which evokes nuts, toasted bread and citric notes.
Dry, but tasty on the palate, velvety. Light and very well integrated, note the
ageing from the first fermentation. Ideal as an aperitif and with rice, fish and
game dishes.
